Peanut Butter Protein Cookies

Check out my 5 ingredient Peanut Butter Protein Cookies – and yes, you can use another nut butter if peanut’s not your thing.

Peanut Butter Protein Cookies

1 cup almond meal

1/2 cup peanut butter / another nut butter (add a pinch of salt if the nut butter is unsalted)

1/4 cup maple syrup

2 scoops protein powder (natural or vanilla flavor)

1/8 cup coconut palm sugar or ground flax seeds in a small bowl for rolling the dough balls in

Preheat oven to 350 °F and line a cookie sheet with parchment paper. Combine the first 4 ingredients in a large bowl, it will make a stiff dough. Depending on the nut butter, it may be a dry or sticky dough. If too sticky, add more almond meal.

Roll about 2 tablespoons of dough into a ball and roll in the coconut palm sugar/flax. Place on the cookie sheet and flatten a bit with your fingers. Bake for 8-10 minutes, cool on the cookie sheet for 5 minutes before enjoying.

Recipe make 12-14 cookies, ~5 grams of protein in each cookie depending on the size of your cookies and the protein powder used.
