Ingredients:
2 cups almond flour
2 tablespoons maca powder
6 tablespoons sesame seeds
¼ cup maple syrup
3 tablespoons lemon juice
2 tablespoons coconut oil
1 teaspoon ground ginger
Pinch of sea salt
An additional ¼ cup sesame seeds to coat the balls.
Line a cookie sheet or baking pan with parchment paper and make sure there is space in your freezer for it.
Put ¼ cup sesame seeds in a medium size bowl.
Place all remaining ingredients in a food processor and process until everything is combined.
Take a spoonful of mixture at a time and roll in your hands to form a golf ball size ball. Then roll in the sesame seeds and place on the cookie sheet. You should be able to make 14-18 energy balls.
Freeze for 30 minutes. Store in an air-tight container in the freezer or refrigerator until ready to eat.
